Ну-с, вот и нашёлся ответ на «скорпионий вопрос». Всё оказалось прозаично – в Средние века скорпион, в числе прочего, был символом Синагоги, в коем качестве он и фигурирует в сюжетах с Христом:

«As Marcel Bulard has pointed out … in his fascinating study, Le Scorpion Symbole du Peuple Juif dans l'Art Religieux des XIVe, XVe, XVIe Siecles (Annales de l'Est. Memoires, No. 6 <1935>), the scorpion was also used as a symbol of the Synagogue, and is often depicted on pennons and banners in late medieval representations of the Crufixion. Между прочим, в упомянутой в цитате книге имеется каталог из семи десятков изображений скорпиона в сценах Страстей – от фресок до скульптур.

P.S. Что касается герба на фреске Монторфано, то он – символический, а буквы SCOR – это всего-навсего первые четыре буквы слова «скорпион»:
