The connecting notion being "activity that doesn't go anywhere." Probably originally a proper name for a horse (see dobbin), a diminutive of Robert or Robin. The original hobbyhorse was a "Tourney Horse," a wooden or basketwork frame worn around the waist and held on with shoulder straps, with a fake tail and horse head attached, so the wearer appears to be riding a horse. These were part of church and civic celebrations at Midsummer and New Year's throughout England.

В русском языке есть похожий переход – «это мой конек».
Т.е. этимологии нет. Но, это явно не так, было еще и другое понятие «hobby». 1675:

HOBBY (hobbin, F., hoppe, Dan.) – кобыла. Видимо, это и есть «кобыла». Спутано «л» и «n». Кстати, словарь 1826 связывает это слово с «hobble» - лошадиная попона, седельная подушка. В то же время для «hobby» дается понятие «неуклюжая лошадь»; кроме того, указывается связь с «ίππος» - лошадь, кобыла.

Вот, что пишет Бикс:

Обратите внимание на венетское «ekvon». По-моему, это «конь». А, с другой стороны, опять корень «кб» - «kv», как и в словах «кабан», «кобыла», «кобчик, кобец» - ястреб, «кобель» - щенок, чеш «kobon» - конь. Нет ли здесь «кп» - «кб»? Этимологии слова «кобыла» нет.

Окончательную точку ставит Горяев:
… другой звуков. формы др. фр. hobin = иноходец, англ. hobby = лошадь мелкой породы, датск. hoppe, лат. hobellarius, hoberarius.

HOBBY (hauberean, F., hobbie, Belg.) – разновидность ястреба, который охотиться на голубей и жаворонков.

1826:
HOBBY, s. – вид ястреба; T. “habech”; F. “hobereau”; W. “hebog”. Что-то это напоминает «хапок» или «хапач». Тоже корень «кб» / «хб», ср. hauberean, F. и лат. hoberarius.
Кстати, «ястреб» = острый, лат. «Astur», ср. «star» - звезда, лат. «astra» (stella).
